Dinner with Elevated Noms

The chef couple Alain and Ashley Rose @elevatednoms invited us into their home to enjoy their favorite infused dishes . One of perfect for fall weather inspired this roasted butternut squash soup recipe, infused with cocunut cream. Documented by our photographer Donovan Moss. Roasted Butternut Squash Soup

1. Roast butternut @ 425 with olive oil, salt and pepper and some sage until tender.
2. In a medium pot, sweat onions and carrot with some olive oil. Once translucent add garlic and cook for 2 min.
3. Add roasted butternut to pot, stock and coconut cream. Bring to a boil and reduce to simmer. Simmer for 30 min then blend until smooth.
4. Garnish with leftover fried skins, burdock root, black seeds, calendula and infused coconut cream.
